Baked Sea Bass With Saffron Mayonnaise&Capers



Peru is a country with a nearly 3000 km long coast line.
Fish and seafood tastes wonderful and different than in other places.
Maybe it’s cause of the cold Humboldt Stream that boarders the coast and brings cold water from the Antarctica to the South American coast.  It’s reach in oxygen which favors the existence of Plankton, nourishment for many sea dwellers.
One of my favorite fish (which unfortunately has become awfully expensive at the local fish markets) is
sea bass.
I got this recipe from a Peruvian friend and adapted it slightly by adding saffron  and dill to the mayonnaise, which gives it a beautiful color.
As I love easy and tasty recipes this is one of my favorites cause of its fast and uncomplicated preparation.
During the fish is cooking in the oven there is enough time to get ready for your guests.
The success of this dish depends of course on the freshness and quality of its ingredients and makes a wonderful treat to impress friends and family. This is because it looks so laborious and sophisticated, so nobody would suspect it’s so easy.
Actually, my friend Carmen calls it the ideal plate to impress your mother in law :-)
You need:


- 4 sea bass filets
- 3/4 cup of mayonnaise   
 - 1/2 cup of capers
- 1 teaspoon of fresh lemon peel
-  ½ teaspoon of saffron
- 1 spoonful of chopped dill
- Salt (Very little because the capers are already salty)


Preparation:
Mix all ingredients with the mayonnaise
 and spread evenly on top of the sea bass filets.



Preheat oven to 400º degrees.
Bake 20-25 minutes or until fish is done but still mellow.
Serves 4

Irresistible Apricot Chocolate Cakes 

These Mini Apricot Cakes are one of my favorite sweet treats.
They are very easy to prepare and only the smell of them while baking in the oven is heaven.
Today, I have a very busy day ahead, but there is still time left for a quick little sweet indulgence, so let’s start.
For the Mini Apricots Cakes you need:

6 canned apricots
250g  (8.8 oz.) of flour
½ teaspoonful of baking powder
125g  (4.4 oz.) of unsalted butter
120g  (4.2 oz.)of sugar
1/8l of milk
100g  (3.5 oz.) of dark chocolate chips
3 Spoonful of icing sugar
Preparation:
-Cut the apricots in quarters and drain them well
-In a large bowl, combine  the flour, butter, sugar, eggs and milk.

-Mix with a hand mixer until  smooth and fluffy.


-Add the chocolate chips and combine them well with the other ingredients

-Grease muffin forms with a bit of butter and pour the mixture  into the forms until 2/3 of each form is filled
-Top each form with a piece of apricot


-Preheat oven to 200ºC
-Bake the cakes at 200º for about 20-25 Minutes or until golden brown and a toothpick inserted into the center of the cake comes out clean.

-Let them cool down and dust with icing sugar.
Serves 12-14
