Irresistible Apricot Chocolate Cakes 

These Mini Apricot Cakes are one of my favorite sweet treats.
They are very easy to prepare and only the smell of them while baking in the oven is heaven.
Today, I have a very busy day ahead, but there is still time left for a quick little sweet indulgence, so let’s start.
For the Mini Apricots Cakes you need:

6 canned apricots
250g  (8.8 oz.) of flour
½ teaspoonful of baking powder
125g  (4.4 oz.) of unsalted butter
120g  (4.2 oz.)of sugar
1/8l of milk
100g  (3.5 oz.) of dark chocolate chips
3 Spoonful of icing sugar
Preparation:
-Cut the apricots in quarters and drain them well
-In a large bowl, combine  the flour, butter, sugar, eggs and milk.

-Mix with a hand mixer until  smooth and fluffy.


-Add the chocolate chips and combine them well with the other ingredients

-Grease muffin forms with a bit of butter and pour the mixture  into the forms until 2/3 of each form is filled
-Top each form with a piece of apricot


-Preheat oven to 200ºC
-Bake the cakes at 200º for about 20-25 Minutes or until golden brown and a toothpick inserted into the center of the cake comes out clean.

-Let them cool down and dust with icing sugar.
Serves 12-14

  4. Oops, sorry - double post! Anyway, great looking dish. I really love the look of these little cakes. I don't use apricot much in baking, and that's my loss - its flavor works so well. Really good stuff - thanks.

  8. I've never been able to find canned apricots. Sad.
    These look REALLY delicious. And cute, with those little apricot showing off their sunny rounded bellies.

      the good news is if you can't find canned apricots, you can use as well fresh ones.
      Give them a quick boil, peel them and remove the stone. Then cut them in halves or quarters according to their size and follow the rest of the recipe.

  10. i have never tried an apricot chocolate cake but these look so cute and truly irresistible! :D
    do you think we can make a big cake instead of mini cakes or would the recipe need to be modified?

    1. Hi Abeer,
      actually I always prepared the mini cakes but I think if you prepare a big cake instead you don't need to modify the recipe, except for cutting the apricots in smaller pieces so they don't sink to the bottom.
      Most probably it's necessary to prolong baking time as well, cause of the larger quantity.

  11. I LOVE how these little cakes look! As a non-frequent baker, I only bake when I'm really excited about the recipe, and these cakes not only look easy but look SUPER delicious!!! I need to buy canned apricots first!
